Strawberry Cocktail. Roast Leg of Mutton. Onions au Gratin, Peas, Kumeras Baked. Plum Pie, Cherry Arcadian. Strawberry Cocktail. —Wash berries and cut in halves, reserving a few of the finest to use as a garnish. Mix with a little diced pineapple, sprinkle with castor sugar and lemon juice. Chill and serve in cocktail glasses. Cherry Arcadian. —lib fresh or tinned cherries, rind of half lemon, 2 cups milk (scalded), 3 tablespoons cornflour, 1 tablespoon milk (cole*;, 2 eggs, 1£ dessertspoons sugar, 4oz castor sugar, pinch cinnamon. If using fresh cherries, stew them with sugar to taste. Drain cherries and turn into a fireproof dish. Heat the milk and add a pinch of cinnamon. Blend cornflour with a little cold milk, add to the scalded milk and stir till it boils. Simmer three minutes and stand aside. Beat yolks of eggs with 1£ dessertspoons sugar and pour cornflour mixture over them. Return to saucepan and stir until mixture cooks. Add a little vanilla flavouring. Pour over cherries in dish and allow to cool. Beat whites of eggs to a stiff froth, add castor sugar, and continue beating until very stiff. Pile in the cusjtard and leave in a cool oven until meringue sets and lightly browns.
