FAMOUS OMELETTE
TO HAVE MONUMENT
For the first time in history, it is claimed, a monument is to bo erected to an omelette, says the "Daily Mai" St. Michel, on tho Breton coast, whero he late Mme. Poulard's famed omeictte is to be immortalised in granito or marble.
A movement with this object in view has boon launched by the Key. E. E Couillard, parish priest of Mont St! Michel, contributions are being received, and the memorial is to be dedicated within a year. Many admirers, however, say that the best monument to Mme. Poulard is the omelette with which her name has been linked since 1873. Tho secret of its iragranco is being discussed by gourfnets, many claiming that the recipe W?« -fr' 1 oggs> I'resh fat» P^s fresh milk. Mont. St. Michel has a number of "Poulard Kestaurants," each claiming to be the only authentic one, and in each this omelette is served. Mme. Poulard died last May, and on her tomb is the inscription:— "Here repose Victor and Annctto Poulard, faithful spouses and good tav. em keepers. . | "May the Loid welcome them as they received their guests."
