ANALYSIS OF MILK AND ALCOHOLIC LIQUORS.

Dunedin, This day. Of fifteen samples of milk taken by the police under the Adulteration Act, Professor Black certified that seven were exceptionally good, seven were inferior (the cream having been removed), and one sample had either not been strained or else naturally contained a deal of very foul matter. Of samples of alcoholic liquors submitted to Professor Black the rum was 10 to 50 per cent, under proof. The sherries were found to contain a large qnantity of sulphate of potash, but not enough to necessitate their removal from the market. In the port wines nothing injurious was found, though in one case it could not be called port wine at all, but a mixture of port wine, sugar, water, and carbonic acid The whiskies had_ nothing worse than water, and the brandies were found to have had tannin used for coloring, but not in an injurious quantity.
