I have examined the Samplk of M'Ewin's Bottled Alb submitted to me, and find that it contains — Alcohol by weight, 640 per cent; or by volume, G'ss per cent. Extractive matter, 3'OG per cent.; Acid matter, o'l7 por cent. I have alao examined tho Altc for such deleterious ingredients aa are sometimes added to Beer, and have found no indication of their presence. The three first conditions laid down by the Committee for Wikks and Bkers for the late International Exhibition, as those to which especial prominence would be given, were—lst, Low alcoholic per centage : 2nd, Freedom from acidity ; 3rd Absence of fusel oil; and all those ire fulfilled in th sample.
