Extractive mater, 306 per cent,; Acid matter, 017 per cent. 1 have also examined the Ale fnr such deleterious ingredients a3 are sometimes added to Beer, and have found no indication of their presence. The three first conditions laid down by the Committee for tyikes and Beers for the late International Exhibition, as those to which especial prominence would be given, were—lst, Low alcoholic per centage : 2nd, Freedom from acidity ; 3rd Absence of fusel oil ; and all these are fulfilled in this Bample.
