BRAISED LEG OF MUTTON

Take a boned leg of mutton. Make a seasoning of breadcrumbs, thyme, and a little grated lemon rind, and pepper and salt, blended together with butter. Press into the leg and tie up and place in a deep pan. Cook quickly over the fire in 2 tablespoons of butter. Then add some onion, carrots, and turnips, cut into dice, and S cups of hot water, and salt and pepper. Cover very closely and cook for 3 hours, uncovering it the last half hour. Remove the leg and strain the liquor. Thicken it and serve.
