DAMSON CHEESE The old-fashioned damson cheese is a pleasant change from the more usual damson jam. To make the cheese, split up 121 b. of damsons and boil briskly in a quart of water. When soft beat to a pulp and then rub through a coarse sieve. Boil up 121 b. of sugar, add the pulp and boil quickly for 20 to 25 minutes. By this time the mixture should be thick enough to fall in thick drops from the spoon, when it may be poured off into pots or moulds and covered.
