CHEESE OMELETTE Two eggs, Joz. grated cheese, 4oz. butter, pepper, salt, a little cayennfe, 1 teaspoon water. Beat the eggs with the water, salt, pepper, and cayenne, until well mixed. Add the cheese and mix together. Melt the butter in the pan, and when hot pout in the eggs. Stir a little until set, but still soft. Fold oyer and turn on a hot dish. Sprinkle wijji grated cheese. When cut the omelette should be quite moist aud soft inside.
