USE OF FROZEN MEAT
AN EXPERT'S OPINION. "There is no question about the high quality of frozen meat; it lias boen demonstrated to a much wider public than tho population of New Zealand that it is a high-class food, and ]nst as palatable and nutritious as freshlykilled meat," said Mr. C. J. Realms Director of the Live Stock Division of tho Department of Agriculture, to a "New Zealand Hjjrald" reporter. He added that frozen meat, when properly defrosted, was very little darker in colour than freshly-killed meat. In fact, frozen mutton and lamb carcasses, which had a good outer coating of fat, showed no difference in comparison with recently-killed meat. Referring to the agreement entered into between tho Government and the freezing companies for tho supply of meat to retailers at Imperial purchase prices, Mr. Reakes said that tho prices thus fixed were a great deal lower than the ruling meat prices in most other countries, notably tho United States and Canada. By taking the Imperial purchase prices as n standard, the Government was safeguarding the interests of both producers and consumers, and the scheme would prevent nnv undue increase in prices in tho caso of n fat stock shortage, or keen competition in the markets. In framing the agreement with tho companies, care had been taken to provide that either freshly-billed or frozen meat could bo supplied to the retailers, providing both were available. It would not he wise to draw on the. frozen meat stocks if the retailers could bo supplied with freshly-killed meat.
