FLAVOUR OF EGGS. 'Egs-produccrs. will bo studying their own interest if they can create a greater demand for the article they produce. If any Iciud of food is palatable ami eujoyed tho demand will increase. Tho apnparimco of a fresh egg is not the only object that should bo aimed at. The public ar e quick to appreciato the superior articlo, and besides being fresh a strong yellow yolk is expected. Tho taste of fresh eggs is sometimes referred to in complimentary terms by visitors, and tho remark often taken as a desire to please, but it is an -ojidoubted fact that the flavours of eggs do differ considerably. Eggs which have a very pale yolk aro sometimes insipid and almost tasteless, and fowls fed on brewers' grains, or similar washed-out foods, will, unlaws fed .-on other stronger foods, which will counterbalance the effects, lay eggs the demand for which is by no means as keen as we would wish. Fowls that have fre9 range, aud given corn at night, lay eggs that aro usually all that can be desired; but where confined foods that contain tho necessary substitutes .must be given to get equal results. Green food and fresh water are therefore essential. Sulphur, salt, and charcoal (in small quantities) as necessary extras. Maize as a body builder; wheat, sharps, bran, meat, etc., as profit makers. Clean, sanitary, well-ven-tilated buildings for promoting healthy vigorous stock. Small eggs from pullets are duo to over-forcing. If fed on maize the pullets tako longer to mature, and when they commence laying tho eggs are larger. Many breeders hasten tho light breeds to lay at four and a half months; we prefer tno birds to bo six months before laying. N.Z.
