OLD WINE BY ELECTRICITY
MATURE 12-YEAR. WHISKY IN A FEW MINUTES. Giving raw wine and spirits the properties they acquire by being kept for a number of years is an art that has been sought after b.v scientific men for very many years. The secret lias now, it la claimed, hfcon solved by au eminent professor of the Sorbonne, Paris, Professor diaries Henry, who is able in a. few minutes to convert whisky three years old into a matiire whisky pronounced by experts to be at least twelve years oki. Burgundy is already being ripened andmatured by this process in France, and successful experiments have recently been made with beer and essential oils. _ The spirit or wine is placed in a special receptacle fitted with two tubes called "pursers," and .the tub™ aro charged with high tension electricity of from 60,000 to 150,000 volts. The rc-. suit is that all the bacteria, ferments, and impurities collect in the tubes and are removed and all further fermentation is stopped. The process, which.is very rapid, does what only age has been able to do hitherto. The cost of the electricity is only about one psiiny for every hundred gallons treated.
