FROZEN MEAT IN FRANCE

■ GOOD EFFECTS OF THE WAR.. The Association Internationale du Froid,- which has its. headquarters in Paris, is looked upon by many in the trade as tho body which did much of tho pioneering work in educating Continental opinion to frozen- meat! although the war has been the compelling force to that diet. The advent of France into the field of buyers must prove, of, extreme benefit to -the .producers of Australasia. Up to the end of January, France had ordered 150,000 tens of frozen meat with which to, feed her armics-in the field. - In the past France .had; been a determined opponent, but the necessities of the great war have changed all previous sentiments. Jar more striking than France's early essay in frozen meat purchases" is a set of resolutions , recently passed '.at a session of the French; Academie de Sciences, at which were present delegates of .Agricultural Societies. Such _ a conclave could bo fairly counted with representatives of French agrarianism, and it was not more than a year ago that at a Congress it ;h'ad been more or less officially declared by these parties that refrigeration- would only he used in France to help export, and not import industries.;..

War, -however, has brought a complete; change of front on the part of these authorities, for the following resolutions stand to their credit':—

Resolved: "(1) To give a place to frozen moat in considering national meat, ssijiplies for the civil and military population; (2) to; create, without waiting until'the'end of the war, in the large centres of consumption, refrigerating: depots of a sufficient capacity to hold such frozen meat supplies, on the'.lines of the large stores in Great Britain; and (3) "to recommend the .■ establishment of abattoirs . provided with cold storage accommodation for the purpose of slaughter 'in the meat-raising districts." Frozen meat is vital to France at the moment for the purpose of preserving her_ own herds and flocks," as well as assisting in the food supply. About one and three-quarter million cattle have already been lost to her in her Eastern war area, and her other resources need careful nursing. There may not be a great deal of sentiment in business, but there must be honesty.
