"In five, years Australia will export ir.cro frozen beiif than any country in the world." • That is the opinion of Mr. Russell Rayson, inventor of tlie MacMeokan Freezing and Defrosting Process, who has returned to Melbourne from a business trip to England. "South. AmoricA," ho says, "lias almost abandoned freezing, iu favour of chilling, bs chilled beef, brings a better- price. By vising formaldehyde in chilling, the mildew troublo lias been got rid of, but the long journey from Australia renders the chilling process ineffective, and : tli,e amount of formaldehyde require'd'would injuriously affect the meat. Australia, - therefore, has a great chance to capture the hard frozen trade. People at Smithfield," Mr. Rayson went i onto say, "are. looking forward to the operations of Messrs. Swifts in Qneens- ' land with great interest." Mr.- Rayson 'does not regard the firm as a trust.
