The entry of English and Welsh cattle into the Argentine has been prohibited. —Press Association, Buenos Ayres. N.Z. CHEESE EXHIBITION. The Hon. Thomas Mackenzie, High Commissioner for New Zealand, opened au Exhibition of New Zealand cheese at 43 Tooley Street, recently, as previously cabled: The cheese, 75 crates in all, is six months;,, did, and was exhibited at the Dunedin Show in tho early part of June, There is a good {reason, gayp an English paper, as was explained by tho High Commissioner arid meriibers of tho cheese trade in .London and tho provinces,'why these exhibits, all of which took prizeß at Dunedin, havo been sent to this country.- Fault was found with the consignments of last year, merchants considering that they were not up to the standard of quality and flavour. Their complaints i were forwarded to New Zealand, and tho cheese manufacturers, put on their mottle, set to work in order to show, that they could, make an article which could compare favourably with the products of other countries. : The cheese found favour witH the who'saw it. The Sigh .Commissioner, while admitting that the .criticisms of' last year's product were justified^ : invited the representatives of the 'tradfe to express their views freely. ■ :Ono speaker'thought-that having' regard to the .large, sums of ' mpney which .the.New-Zealand Government spent on }tho' improvement of - '.dairy, .-- produce;'' there? was'no' reason' why. tho cheese. (When it arrived iii this .'country, should not hold- its ij.wn. ; Another expressed the. .hope .that cheese 'like. th 6 present exhibits ,would* be sent - here' regularly, ilt was all very well to complain about transport and the, .railways, but if- tho iarticlo was not''good,- 'no matter what, care .'watf taken'to''export it, it' would ; !bo, ThoiJligh Comex-. 'plaiie'd' that 1 -{lie.ciirelesshcss •in the manufacture of last year's cheeSe was due to so many factories having changed from butter to cheese making. Ho had no doubt that tho manufacturers would work up to the required standard in future, and representations in this sense'would be made to tliem. Twenty-live years ago the New Zealand outprit'of butter and'cheese was £160,000.. -He had just seen tho balancesheet of one factory alone, which had Exceeded that amount. During the present, year,. New Zealand, hoped to seo the exports of butter and cheese reach' five millions. New Zealand could easily double itspresent output if the market existed, -as .he, knew that it did. The next exhibition, would be. one of fruit. The fruit industry >in New Zealand was developing; and he hoped that in future "it would represent as large an export value-as butter and cheese at,the present moment. ' .
. Tho basis of profit depends upon, the quality- of the cheese. Therefore, the important factor is to improve tho cheese.' ' The "Victor"' v"at, the ..modern cheese-maker's help, adds. materially to the quality, because the sloping bottom allows the whey to fun freely, leaving the curd high and dry. Investigate tno merits of "Victor" Vats. Albert J. Par-: ton, Plumber, Carterton.—Advt.
