Whittaker, an Irish butter exporter, was summoned at Liverpool for selling butter containing 12.10 per cent, of sugar. Whittaker stated that the sugar had been added because the public taste wanted mild salted butter. He had done so for thirty-five years. French butter was similarly cured. Tho magistrate dismissed the case, holding that sugar was a preservative similar to salt.
