QUALITY OF DAIRY PRODUCE.

. A REFORM MOVEMENT. An important movement having a direct bearing upon tho problems with which dairy companies have been confronted lately with respect to the quality of butter and cheese, has 'been inaugurated in Taranaki. H has Jong been recognised that tho keen competition which exists between rival neighbouring companies for supplies of nfilk and cream has made it possible for the negligent supplier to preserve a more or less independent position, knowing that if his supplies are rejected at 0110 factory there are others within reach . where the produce will be accepted. This weakness in factory management has been freely ventilated during reccnt gatherings of dairymen. In order to check tho practice two suggestions have been discussed; namely the rejection of all suspected supplies; or as an alternative method, to grade the produce and manufacture it separately, paymentto be iuade to tho farmer according to grado quality. The last-named method has tho weakness that produco made from supplies of an admittedly inferior quality would have to be handed as second or third grado quality. This course is undesirable because those who should know best are firm in j&o belief that if duo care is exercised in' keeping the milk and cream pure, a first grado article could be turned out at overy factory. Experience has shown that the most effective means' of bringing about refoVm is to adopt such measures as will fix the responsibility on to tho offending person and make him feel the monetary loss following his failure to observe the conditions which aro conducive.to providing a first-class article. The Taranaki movement referred to, aims at improving the conditions under which tho milk is delivered at the factory. To effect that purpose a number of factories have decided to preclude the moving of suppliers from | ono district or factory to another during the currency of any season. Tho basis of this agreement is oil the following lines:—(l) For the purposes of this agreement, the annual "season" shall be deemed to be tho period commencing at August 1 in ono year and continuing until the next succeeding May 31. (2) The companies parties hereto will, at all times, refuse to accept milk during the currency of any season from any supplier who has, during such season, supplied milk to any company, and has had his milk refused by such company by reason of being unfit for the manufacture of lirst-class butter or checsc, or wishes to change' to any ot|ier company for other reason, and will rc/fuse to allot shares to such stipplieryfintil tho completion of such season except as provided in Clause 3 hereof. (3) Any company may allot shares to, and accept milk from, any supplier changing his residence during any season to a residence closer to n factory or creamery of such factory. (4) This agreement to bo continuous and remain in forco from season to season' as between tho respective companies, except that any company can, by written notico 1o the other companies in the month of June in any year, withdraw as at that date.
