TO-DAY'S DINNER.
(Specially Written for Thb Dominion.) ' SATURDAY. Kidney Soup. Pickled Pork. Potatoes. I'arsnipsS Bread and Butter Pudding. SUNDAY. Oyster Soup. Roast Bedf. Yorkshire Pudding. Bailed Potatoes, Peas. Date Pudding. Custard Saucb. Apple Snow. FOR SUPPER. Galantine of Veal. Salad. Rhubarb Flummery and Oup Custards. Banana Jelly. RHUBARB FLUMMERY. One buncli rhubarb, 4oz. sugar, £ pint water, whites of 4 eggs, 1 tablospoon castor sugar, a squeeze of lemqn juice, £ teaspoon ground ginger. Wash tho rhubarb well and cut into inch lengths; make a syrup of tho sugar and water; add the rhubarb and cook very slowly till quite soft; rub through a sieve, add the lemon juice, ginger, and a few drops of carmine if necessary. Have the whites of the eggs stiffly beaten, add tho tablespoon castor sugar, and when tho rhubarb is quite cool stir them lightly in; heap on a glass dish and servo cold with cream or custard.
