rSpeoially Written for Thi Dominion.] THURSDAY.' Celery Soup. Rissoles. Potatoes. Vegetable Marrow. Treacle Tart. RISSOLES. Half a pound cold meat (minced), 1 6Mall piece onion, J tablespoon chopped parsley, i tablespoon sauco or ketchup, 1 gill stock, Joz. dripping, Joz. flour, seasoning. Melt the dripping in a saucepan. When hot put in tho onion, chopped small, and fry till tender. Be carcful not to burn it; add tho flour and tho stock, warmed; stir all the time, and boil well; then add the ketchup and parsley. Take off tho fire, mix in the meat, and spread on a ,plate to cool. Roll in balls on a lightlytloured board. Dip each rissolo in egg and lino breadcrumbs. Fry in a nice brown and deep smoking fat. Dish in a hot dish, garnished with parsley.
