[Specially Written for The Dominion.] SATURDAY. Kidney Soup. Stewed Tripe. Masked Potatoes. Turnips. Crumb Pudding. Stewed Pears. SUNDAY. Asparagus Soup. Roast Leg of Pork. Apple Sauce. Baked Potatoes. Brussels Sprouts. Pruuo Pudding. Sweet Sauce. Bakcwcll Pudding. FOR SUPPER. Pressed Beef. ' Winter Salad. Trifle. PRINCESS PUDDING. Cream 1 gill, gelatine $oz., orange juico 1 gill, eggs 3. sugar 2oz„ a little lemon juioe. Soak the gelatine in a little milk till Boft. Put the cream in a saucepan with the. gelatine, stir ovor ; -tko firo till dissolved, caro being taken that it does not boil. Beat the yolks of the eggs, add them to the cream. Stir till it thickens, but do not let it boil. 1 Add sugar. Remove from fire, add tho orango and lemon juice, and a few drops of carmine. Whip whites of eggs stiffly,i and mix lightly to the other ingredients. Stir until nearly cold, then pour into a wet mould. When cold turn out, and decorate with sections of orange rolled in pink Bugar, and with whipped cream.
