[Bjwcially Written for The Dominion.] SATURDAY. Vegetable Soup. Mutton Cutlets. Mashed lotatoes. Tomatoes. American Pudding. SUNDAY. Articlioko Cream Soup. Roast Beef, lorkshiro Pudding. JJakcd Potatoes. ' l l rench Deans. Applo l'io. Custard, FOR SUPPER. Cold Eoast Beef, "Winter Salad. Chceso Straws. Pruno Cream. ARTICHOKE CREAM SOUP. Half-dozen artichokes, 2 largo whito ■onions, pieco celery, 1 bunch herbs, °oz. butter, 2oz. Rico ilour, 2 quarts milk or milk and stock (as whito as possible), 1 gill cream, cayenne and salt, croutons. I repare and slice tho vegetables, and drain well. Melt half tho butter, add tho vegetables, and stir without discolouring; add tho stock, and simmer gently for about one hour, until tender; rub through a sieve, adding tiio milk to help it through; wipe your saucepan clean, melt tho rest of tho butter,'add tho rico flour, and cook for ono or two minutes; then add the stock, and stir till it boils and thickens; oook well, stirring all tho tnno, for about five minutes; then add salt and cayenuo to taste, and just beforo serving, add the cream, off tho fire; servo m a hot tureen with croutons of fried broad.
