j [Spaoially Written for Tus Douwjon.] MONDAY. Colery soup. Boiled shoulder of mutton. Caper Sauoo. Carrots, Turnips. Applo Fritters. APPLE HIITTBES. Butter Got. Hour, 1 tablespoon melted butter, a pinch of salt, 1 cupful tepid water, whites of 2 eggs; apples, pooled, cored, and quartered, castor sugar. Sift tho flour and salt into a basin, make a woll, pour ill tho butter, iitir the flour in gradually, adding water, a little at a time, and beat into a smooth batter. Havo whites beaten to ft stiff froth, stir in last of all just before using. Havo the frying fat ready hot, dip tho apples into the batter, and fry a golden brown on each sidp; drain on naper, and servo with castor sugar sprinkled on. FOR TO-MORROW. Stock. Vegetables. 1 rabbit. Stale bread. Defiance Butter. All Grocers*
