Peel, quarter, ami core the apples, put them into saucepan with tho butter, sugar, lemon rind, and juice, and stew till tender; then teat to a pulp with. a wooden spoon, stir in tlio well-beaten yolks. Line the sides of tlio piedisli with pastry; pour in tlio mixture, and bako in a moderate oven till set, Defiance Butter. All Grooere."
