Split tlio spongo cukes, mid spread llinni with jam. Cut them into ncnt pieces, and put thorn into it groused pie-dish. Beat up tlio yolks of tlio eggs with lh» sugar, and pour over them the hot milk. Strain the custard over tho spongo cukes, plaeo the pie-dish in u Yorkshire tin, and surround the dish with water; this in to prevent tho custard boiling and curdling, Hake tho pudding in a cool oven until tho custard is set (about 30 minutes; thou tuko (ho pudding out of tho ovon. Whip up the whites of tho eggs stilfly, add to them very lightly 2 tnblcspoonfuls of enstor sugar, plnco tho moringuo on tho pudding, dredgo with sugar, and put tho pudding into a cool oven to set tho white of egg. It will take about 30 minutes. FOR TO-MORROW. Stock. Ox-tail. French beans. Raisins or sultanas. Fruit for stewing. FOR SUNDAY. Green peas. Stock. Hindquarter of lamb. Fruit. Cauliflower. Apricots. Pastry. Croain. ' FOR SUPPER. Salad. Meringues. Fruit for fruit salad.
