[Specially written for The Dominios.l TUESDAY. Cottage Soup. Mutton Cutlets ala Loubise. Mashed Potatoes. French Beans. Date Pudding. Sweet Melted Butter. MUTTON CUTLETS A LA LOUBISE. Six or eight cutlets, loz. butter, loz. flour, J pint good white stock, $ doz. small onions, 1 medium-sized potato, £ teaspoonful peppercorns, 1 small teaspoonfur salt, J pint cream Melt tho butter in a saucepan, stir in the Hour, add tho stock, and boil up. Saw off tho chine-bone from the cutlots. bare the upper end of the rib for about an inch, add them to the sauce in tho pan, also the onions and potatoes sliced, peppercorns, and salt. Simmer slowly about 3 hour, take out the cutlets and dish neatly round a heap of asparagus or French beans. Hub the sauce through a hair-sieve, add tho cream, re-heat, ?nd strain over tho outlets. FOB TO-MORROW. Spinach. Stock. lJlb. Thin. Steak. Mushroom Ketchup. Cauliflower.
