TQ-DAY'S DINNER.

(Specially Trrittoo for Tub Douihioh.] MONDAY. Egg soup. Rice cutlets. Mashed potatoes. Tomato sauce. Lindisfarno pudding. RICE CUTLETS. Quarter pound cold boiled rice, Jib. cold meat (minced), ioz. suet, 1 teaspoonful minced parsley, 1 shalot, or a small pieco of onion, salt and pepper, 2 eggs. Mix all together and bind with 1 egg. Form into cutlets; dip in egg, and then into brown breadcrumbs, and fry in hot fat. Drain on paper. Put a small piece o£ parsley stalk into each cutlet, and servo very hot with tomato puree.

TOMATO SAUCE. Five tomatoes, loz. butter, loz. flour, pepper and salt, cayenne if liked. Heat tho tomatoes and rub through a sieve. Add pepper and salt to taste. Melt the butter, and mix with the flour. Stir it into the tomatoes, and continue stirring it boils. Let it cook for a few minutes. A feiv drops of carmine may be added to bring out the colour. Tinned tomatoes must bo used now. FOR TO-MORROW. Leeks. Mace. Milk. Two pounds steak. Two sheep's kidneys. Pastry. Suet. Raisins. Treacle.
