TO-DAY'S DINNER.
(SpwUHj writtoa for Ths Douimiok.] FRIDAY. Lentil Soup. Baked Fish. Oyster Sauce. Mashed Potatoes. Rice Fritters. RICE FRITTERS. One cup of boiled rice, 1 cup of milk, 2 eggs, 2 tablespoonfuls flour, a pinch of salt, flavouring if liked (such as nutmeg, lomon-peel grated, or essences), currants. Beat tho eggs and mix the flour in with a little of the milk and stir until smooth. Add the rest of the milk, rice, and currants. Make a frying-pan hot and put in about lloz. of butter or good dripping. Drop in a tablespoouful of the batter and fry until a nico golden brown on the under side; then turn and cook on the other side. Lift on to a piece of paper which should be placed on. a hot tin plate. Keep in a warm place until all the fritters are cooked and serve at once with a cut lemon. FOR TO-MORROW. Celery. Stock. Two Pounds Fillet of Veal. Ham. Pastry. Vegetable Marrow. FOR SUNDAY. Stock. Sirloin of Beef. Cauliflower. Jam. Chocolate. FOR SUPPER, Salad. Chicken. Mayonnaise. Apples. Peaches. ' Cream.
