(Specially written for Tus Douuiioa.] SATURDAY. Celery. Soup. Veal Cutlets and Bacon. Potato Palls, Spinach. Ginger Pudding. Sweet Melted Butter. SUNDAY. Palestino Soup. Colonial Goose. Baked Potatoes. Caulillower. Viennoiso ■, Pudding. Lemon Pie. SUPPER. Brisket of Beef. Salad. Oyster Patties. Meringues. Fruit Salad. MERINGUES. Four whiles of eggs, Boz. castor sugar, pinch of salt, a little extra castor sugar, J pint whipped cream (sweetened and flavoured with vanilla essence), chopped pistachio nuts. Lino '1 baking sheets with ungreased foolscap paper, break tho eggs separately and put tho whites into a china basin. Awl a pinch of salt and whisk slowly at 'first, more quickly afterwards until tho whites of eggs arc Miff. Continue whisking 10 minutes. When they nro sufficiently whisked they have a knotted lumpy appearance; then lake out out tho whisk, and stir in tho sugar as lightly as possible using an iron spoon to do this. Put tho mixture in a forcing bag with screw, but no pipe and set tho mixture on to the prepared tins in small pyramids. Drcdgo thickly with castor sugar and bako the meringues in a very cool oven until a think crust has formed on tho outside. Lift them carefully from the foolscap (if thero is any difficulty) damp the paper). Make an incision at the bottom and press back tho soft meringue to form n hollow space. Put them back in the oven till set inside, then put on tho stove rack to dry. Fill with cream and put 'two together.
