Cut , the- lobster up into small nice- shaped / pieces, add the soft part of the head to ! it, melt the butter in n small saucepan, add the flour, and cook well, pour in tho milk or water, stir until boiling, boil 3,minutes, add cream, cayenne, salt, fish, and , lemon juice.' Put on a plate, smooth with a knife\aud leave until cold. Tako a small, portion of the- mixture, put it on to a floured board, and make into cutlet shape with a knife. Eg? ami crumb and fry- in hot fat. Drain on paper. ' Put a small pieco of the claw of the lobster into the end of each cutlet. Serve on dish paper, and garnish with fried parsley and lemon.
