; IMPRESSIONS OF A CANADIAN. During a visit lo England recently, the Chief .Dairy Instructor' of Eastern Ontario,'' Mr. G.-Ct. Publow, said the need of belter curing of Canadian cheese was very forcibly impressed 011 him whan comparing the quality of tho Canadian product'with that of England and New Zealand. On his return to Ontario, Mr. Piiblow stated that very few, of the cheese from England and Neiv Zealand are placed on the market under t.iie, age of two months, and as a result are much better cured, and. giro bettor satisfaction l:>';he trade in general, and demand about two shillings a hundredweight more ill price thai:. Canadian. English and 'Scotch makers lay considerable stress on having tlioir cheese i.ll. best condition for the market before having them shipped, and this is one of the factors which enables them to get a higher price. A .number of merchants complained of Canadian cheese being too heavy. They are not particularly anxious, . says Mr. Piiblow, for cheese weighing more than 80 pounds. That weight seems to be the most popular. Some merchants prefer a lighter weight cheese. The visitor also found a few merchants who are anxious .for cheese weighing 100 pounds, but they 'are usually wanted for window advertising purposes, and checso intended for this purpose require l to he particularly well .finished and to have clean sound rinds. Many of the Canadian cheese are lacking in this respect, and complaint was made that they did hot strip well.
