(lour, .-pint milk, 2 vgs*> -oz. grated uhoci)liite, loz. Migiir. Alako the pastry, roll it nut n litdo lnrgor than a deep plato. Cut a ;-trip off Hit? edge of the pastry and line the edpe of a greased plato. Wot round with water. Place oit tho top cni?t. Priek tho c'ontro with u fork to provent it rising. Ornament th© and glaze it. Bake in a hot oven 15 minutes. Chocolnto Mixture.—Melt the butter, add tho flour oft' the fire. Boat until free from lumps. Cook two minutes. Add the inilk, stir until boiling. Add the chocolate, sugar, and yolks of oggs. Cook ivithout boiling. Wlien cool pour into tlio pastry and ornament with whites of eggs stiffly beaten and sweetened. Return to tho oven to set the whites and slightly brown. FOR TO-MORROW. Celery. Leg of mutton. Red currant jelly. Cauliflower. Dates. Suet.
