WHEY BUTTER.
MOVEMENT BY A LOCAL FIRM. . Tho making of whey butter is recognised as a profitable business to cheese factories, but the cost of the installation of machinery and of manufacture is so heavy that many factories have been unable to undertake' the business. A local firm of dairy produce merchants has this week circularised factories, intimating a willingness to bnv whey cream and to enter into a ,contrnot for any period that may be desired. .The merchants in question I also ask opinions as to- the relative■ tnl'.ic of whey cream compared with whole-milk cream.
