TO-DAY'S DINNER.
(Specially written {or Tub DoumiOK.) TUESDAY. Mutton broth. Heel' olivos. Potatoes. Mushed parsnips. Sago pudding. Stewed figs. ijekf olives. One pound good steak, loz, suet, 2ozs. breadcrumbs, half-teaspoonfiil salt, quarter tcaspooiiful pepper, one eg;?, one tcaspooiiful chopped parsley, a very littla grated lemon peel, a grate nf nutmeg, stock, or gravy. Cut the steak thin and divido into six pieces. Dip a. rolling-pin into cold water and beat each piece out flat; then trim nicely. Cut trimmings up very finely and add to the breadcrumbs, mid other' ingredients, and make into a forcemeat with the egg. Divide, into six portions, place each portion on a piece of steak, and form into o neat roll; tie up each end with cotton. Put a littlo dripping into a pan. and when very hot Ivy the. olives quickly until slightly brown. Put them into a stewpan, pour on the stock (enough to barely cover them), and simmer gently for an hour and a. half. If the steak is tough, simmer them a little lunger. FOR TO-MORROW. Two pounds artichokes. Stock. One pound sausages. Cauliflower. Treacle. Suet.
