(Specially written for Thk Douikion.l i SATURDAY, i Kidney Soup. Fried mutton cutlets. Baked ' tomatoes. Potato chips. Baked apple pudding. SUNDAY. Tomato soup. Roast sirloin of beef. Yorkshire pudding. Potatoes. French ' beans. Viennoise pudding. Apricot i tart, 1 SUPPER. Cold beef. Salad. Mayonnaise of lobster. Lemon pie. BAKED APPLE PUDDING. Six apples, 1 quince, 2 tablcspoonfiils of sugar, half a lemon, a eggs, ill), of stale bread, a grate of nutmeg, 2 lablospoonfuls of milk, a pinch of salt, half a teacupful ot water. Peel and slice the apples and quince, and put them into a saucepan with, tho water, sugar, candied peel, and somo of the lemon juice and butter. Slew until soft, and rub through a sieve, though this will not be necessary if the pulp is soft and tree from lumps; add the eggs, well beaten, milk, crumbs, and nutmeg. Butter a Charlotte mould or pie-dish, and sprinklo with crumbs. Bake for an hour, turn out, :<nd silt sugar over it; servo hot or cold.
