At a meeting of the shareholders of the Nireaha Co-operulivo Cheeso Co. this week Mr. D. Cuddie, head of fhe Dairy Division of the Agricultural Department, gave nu address on the advantages of wlu'.v separation fur the manufacture ot butter, the visit of Mr. Cuddie being the result of a resolution passed at the annual meeting of shareholders, to the L-lVect that the company consider the advisnblencss of'installing a plant for separating the whey and manufacturing butter. • ■ . '• Mr. Cnddie stated that the manufacture of butter from whey had been in vogue in Canada and America for a number of years, and had been carried out profitably. The Department made investigations, and last year experimented tor a few months at a Taranaki factory, with ;ood results. Other factories w-jre following suit, and it was said that, ono concern made sufficient from Uie whey butter to pay tue working expenses of the Factory. It was shown that for every 10D tons of cheese manufactured they could make' two tons of butter. Tho factories were finding out there was more in the manufacture of whey butter than the Department had been able to show. It was quite possible to make, a first-class butter from whey. The butter-fat which went but in whey was' an unavoidable loss. By conserving it they were not robbing the calves and pigs to my extent. Besides, butter-fat was too dstly a commodity upon which to feed siock, seeing that other feed could lie purchased so cheaply, .He thought the sh-irannlil-ers might well consider the ndvis-ioility of installing a plant on which lw was positive no lose could be incurred. The Department would be only too willing to give every assistance to establish the venture. ' ■.
