Throe samples of the new product to hand—cream cheese, club cheese, and conlommier cheese—are specimens which should create a good demand as soon as they arc known by tho householder. As' compared with the ordinary che,ese sold throughout Now Zealand Hie fancy cheese are table dainties. The fancy cheese is essentially one for local consumption in that some of tho varieties would not keep until they retched markets outside of Nov Zealand. At the same time on the samples to hand it is safe.to predict that attractively got up, there will soon be ■a considerable demand in all tho centres of population. A short time ago the Agricultural Department appointed Miss 6. ■N. Davies. N.N.D., instructress in fancy cheese-making, and a number of applications havo been received for the assistance of the new instructress. At present Miss Daviis is engaged in the South Island, but later she will give her attention to North Island factories. Some of the soft cheese ure. easily made and require only strict attention to the details of the process and a higli standard of cleanliness.
