FEEDING VALUE OF WHEY.
Referring to the feeding value of whey, Dr. Chns. A. Piibhnv, of I'ictoii, Ontario, .says tliiit the great leeding value of whey lies in its sugar co.-itmt, which averages about five pounds in rvwy hundred pounds of sweet whey. One pound <'f sugar in this form wilt put just as much or moro. meat on a pig a.s a pound of fat will, but the sugar in this form is of smaller commercial value owing to Hie difficulty of separating it. from the other constituents. To obtain the greatest value from the whey it must have its sugar ('(intent preserved in the be.4 possible condition. This can bo accomplished only by pasteurisat-ion. of tlio whey at the factory. This -adds fully twenty per cent, to tho feeding' value of the whey. Whey and skimmed milk should always be. pasteurised before being rdtirnod to the patrons, .so that milk-wirricd diseases may not bo transferred from one herd to another through this channel. The whole question of the value cf the byprodncti of the dairy, in fact, depends on tho caro they receive, and if properly handled they probably yield about as much actual profit as the whole milk itself." . .
