"What has been the means of lowering the reputation of our cheese? To my 'mind it is' the careless patron and the accepting of milk unlit .for the manufacture of fino cheese. This is particularly true -where tho competition for milk is keen. Tho'problem lo be solved is: Can the makers, by refusing to accept milk of an undesirable quality, control to a large extent tho quality of the milk without injuring his trade or losing his position? "To my mind tho maker can to a large extent control tho qualify of tho milk delivered at his- cheese" factory, llio should bo a man- of tact ami gooil judgment, ■-.thereby insuring tho co-operation of the patrons, fie should bo firm in his refusal to accept milk ot an undesirable,quality and at the same timo suggest a possible remedy and pointing out the evil of accepting milk of such quality. If this information is given 'in a, gentlemanly manner it. generally insures the co-operation of llio patron" and induces him to produce a better article. "Any progressive maker following tho method outlined should have.a decided improvement in the quality of the milk delivered-and also in the character of his cheese. Any competent maker following along these lines should have no concern as (o.his trade-or position. The result will bo a decided improvement iii quality with increased prices, ihp fanner counts tho dollars and cents and ho will have no'other alternative than to clean up."
