(Specially written for The Dominion.) i SATURDAY. Carrot Soup Mutton Pie. 'Potatoe Cauliflower. Stewed Rhubarb. Boiled Custard. SUNDAY. Julienne Soup. Roast Lamb. Mint Sauc New Potatoes; Asparagus. Oraugo Sponge. SUPPER. Cold Lamb. Lobster Patties. Sala Chocolate Cream. Queen Pudding. ORANGE SPONGE. Juice of i oranges (strained), 1 gi water, juico of 1 lemon (strained), ru of 2 oranges, 1J oz. castor 6ugar, 1 whi of egg, loz. gelatine (light weight), pit and yellow colouring Put the gelatine, water, orange rin and sugar in a saucepan and stir the over a gentle heat until tho gelatino — dissolved. Put the white of egg into large basin, and whisk it until it slightly frothy. Strain tho gelatine, a< water to it, and add the orango and loim juice. Whisk tho mixturo until it thick and fr.ithy. Colour a palo orani and servo piled up in a glass dish.
