TO-DAY'S DINNER.

(Specially written for The Dominion.) THURSDAY. Potato Soup. Baked Shoulder of Mutton. Onion Sauce. Baked Potatoes. Cauliflower. Pineapple Soufflee. PINEAPPLE SOUFFLEE. Three ounces pineapple, 3oz. flour (sifted), 2oz. sugar, 2oz. butter, J pint of milk, 3 yolks and 1 whites of eggs. Melt the butter in a pan, add the flour, then the milk gradually, cook well; add the sugar and the pineapple cut into dice, add the yolks one by one; whip the whites stiffly, stir in to the mixture very lightly, pour into a prepared mould, and steam 1 hour. Sauce: Take 1 gill of pineapple syrup, loz. sugar, a few drops of carmine, boil and pour round the pudding. FOR TO-MORROW. Half Pint Haricot Beans. Flounders. Macaroni. Rhubarb. Suet.
