DAIRY PRODUCE REVIEW. W. Wcddel and Oo.'s Annual Review of tho Dairy Produce Trade of Great Britain is invariably interesting, and the review to hand, dealing with the market for the year ended June 30 last, is as intorcstinß a3 any previously issued. The imports of butter into the United King-, dom amounted to 222,790 tons, which is ail average of 4284 ton 3 a weok. Tho chccso receipts were barely over half those of butter, being only ,121,464 tons, or an average of 2336 tons weekly. The past year shows tho greatest importation of butter on record, exceeding the previous highest nmount, which was ill tho year 1907, by 3573 tons. Tho imports of butter into tho United Kingdom from British possessions and foreigu countries, respectively, for oach of tho past ten years compare as under
Of the total Now Zealand supplied 15,852 tons during the oast year, equal to about 7 per ccnt. Australia contributed 44,395 tons or about 20 per cent. With respect to shipment, tlio Review makes the following interesting statement:—"There is no doubt that it would bo a groat advantage if Now Zealand butter could bo shipped weekly, aud, as soon as thero is sufficient cargo, a suitable service doubtless will bo established. 'A regular weekly arrival of supplies, all through tho year, would do very much to raise the selling value of the "choicest" butters from tho .overseas Dominions. It is largely owing to its regular weekly supply on British markets that Danish maltc3 more money than the best Australian. New Zealand; and Canadian. The grocer is able to get each week just enough freshly made Danish for his week's requirements, and this, more than almost anything else, helps Danish butter to enjoy such, a high reputation. Refrigeration of "choicest" butter (when it is put into tho refrigerated chamber straight from tho churn) scarcely affects its freshness at all, and it is cxtrcmoly difficult to tell by flavour tho age of a strictly "choiccst" butter, which has not boon mado for more than two months. As soon as choiccst New Zealand begins to arrive here all the year round iu sufficient quantity to meet requirements, then it will probably attain as high a reputation as Danish, and make on avcrago as high a price."
THIS SEASON'S PRODUCE. From an authoritative source it is to be gathered that tho total quantity 01 butter and cheese, securcd by sale an,, consignment by tho various firms for tho current season, is amroximatelv 35.C87 tons. Of .this butter comprises 14,028 tons, and cheese 22,059 tons. Tho actual quantity of butter and cheese imported into the United Kingdom in the past season (according to Wcddel and Co.'s "Review") comprised 15,852 tons butter, and 20,236 tons cheese, or a total of 36,105 tons. Thus the quantity contracted to be sold and consigned this season is practically tho same, exceut that more chccso is to bo sent, and less butter. The approximate quantities seenred by the several firms show as under:—
