There .ire two simple tests for ascertaining the ago of eggs which it is use-' .fill for sellers and 'buyers of eggs to know. The first is by observing the .size of the air space, which is very small in a newlaid egg, but increases as the egg grows old. This test is commonly known as "candling," and consists in holding tho egg up between the eye and a lighted candle. The small air space in an egg increases day by day, till at tho end of a month it occupies about one-eighth of the whole egg. The second test of the age of an egg is made by procuring. a solution of salt' and water, consisting of half-a-ponnd of salt-dissolved in three and a half pints of water. A new-laid egg will sink to the bottom of this solution, an egg three days old will be of almost equal weight with an equal bulk of the liquid, and will remain suspended in it, an egg four or five days old will 'rise to the surface, and tho older the egg is the greater will be tho portion of it floating above tho surface of tho liquid.
