(Specially written for The Dominion.) THURSDAY. Veal cutlets. Mashed potatoes. Spinach, Caramel pudding. CARAMEL PUDDING. One quart of milk, G yolks of eggs, 2 wholo eggs, the rind of 1 lemon, sugar to taste, vanilla. Heat the milk with the lemon rind and sugar to taste; when almost boiling pour it on the beaten eggs; flavour with vanilla; line a mould with caramel; when set, pour in the custard and steam till set; cover the mould with buttered paper; cook slowly from half to three-quarters of,an hour. FOR TO-MORROW. Two pounds beef steak. 2 sheeps' kidneys. Potatoes. Marrow.
