According to statements made'at tho Magistrate's Court this morning by the counsel appearing for two men charged with behaviour of an objoctionablo nature in a railway carriage, the ride from Rangiora to' ChriEtchurch after tho recent, races must havo been an exciting time for tho inmates of ono second-class carriage. It seems that a squabble started over a packet' of cigarettes, and the owner of the packet had his head pushed through the glass of a window. Ho retaliated by doing the samo by his assailant. Then one of tho defendants entered the carriage and was knocked down twice. After that ho fought. It was not quite clear with whom tho original assailant escaped, and when the police came the two men charged gave their correct names and paid for the damage done. The police reports of the incident make no mention of the alleged third pnrtv, so tho 'two men were lined —one 10s., and tho other 20s.

CALF'S HEAD A LA FRANCAISE,

Bono half a calf's head, soak it m salted water for half an hour, spread it with nice forcumeat; cover this with some slices of lemon, and somo hardboiled eggs cut in half; roll the. head up lengthwise and tio it in a cloth; put it into sufficient weak stock to cover the iiead; bring to the boil, and skim well; then add a few vegetables, and simmer for tiirco hours; remove- the cloth, place the head on a largo crouton of bread, cover it with green parsley sauce, and garnish with finelychopped lean ham, and yolks of eggs rubbed through a sieve; round the dish put rolls of bacon and brain balls, also hard-boiled eggs.
