TO-DAY'S DINNER.
(Specially written for The Dominion.) MONDAY. Sweetbreads with mushrooms. Potatoes. Cauliflower. Stewed quinces. Bread and butter pudding. SWEETBREADS WITH MUSHROOMS. Tv.'o sweetbreads, some lardoons of pork or bacon, 1 small turnip, carrot, and onion; a few mushrooms, a little celery, 1 blade of mace, i allspice, salt, ami pepper, Joz. butter, ioz. flour, J pint stock. Prepare and lard tho sweetbreads, then slice the vegetables, and fry in butter or dripping until light brown; drain and lay them in a saucepan With tho spices, a strip of thin lemon rind, and lay the sweetbreads'on top. Let it come quickly to the boil, then - simmer gently until the sweetbreads are tender. Take up, placo a little butter on each, and put them in the oven to keep hot; strain the gravy, add a littln lemon juice, thicken with the flour rolled in butter, then put in mushrooms nnd sweetbreads, and simmer for 15 minutes. Serve hot. FOR TO-MORROW. Neck of mutton. Carrots. Turnips. ' Capers. Suet. Jam.
