Cut .1 rabbit into' ne'ajb joints,, roll them in flour; cut Jib," bacon into dice, •fry it, take out and fry tho rabbit in it until a nice brown; put it'into a stew ~jar with tho bacon, an onion, s.tuck with a few cloves, a slice of lemon, .-.a. bunch of herbs (thyme, parsley, and ba.y leaf), a tablespoohful of tomato sauce,, pepper and salt; cover with stock made, from, gravy beef. Put on the lid, arid 1 cook in tho oven-or steam until the nieat is tender. Take'up the meat and thicken :the gravy (first taking out the onions, herbs, and lemon) with ioz. flour rolled, in loz. butter.. Boil threo minutes. .Add 1 tablespdonful of red currant (jelly. Serve with,forcemeat balls.'
