{Specially ■ written (or Tnx UOUISIOS.) THURSDAY. Slewed shoulder of veal. Potatoes. Cauliflower. Chocolate would. Fruit. , STEWED SHOULDER OF VEAL. Six or seven pounds shoulder of vial, veal forcemeat, white sauce. , Bone the veal, lay it open, and spread over it a layer of veal forcemeat; roll up and bind with tape. Stew it for three hours in .weak stock, or in water to' which has been added two onions stuck with 3 cloves, 1 carrot, a bunch of herbs, 12 peppercorns, and 2 sticks of celery. The veal should have a pint or more of white sauce rnado from tuo stock poured over it before it is sent to the table, and should lie garnished with rolls of bacon. FOR TO-MORROW. Jib. iold fish.
