TO-DAY'S DINNER.
(Specially written for Thk Dominion.) MONDAY. Scotch Collops. Potatoes. Turnips. Baked'Bicb-Pudding. Stewed Pliims*. SCOTCH COLLOPS. One pound steak, 1. small onion, 1 dessertspoonful of flour, J-piut of water, 102. butter or clarified dripping, pepper, and salt, parsley. Cut the meat into thin, even slices, toirce inches square, peel the onion and chop it finely, melt th© butter, when quite -hot put in the meat, and fry it brown.' Lift out.tho meat and < put ia tho onion and flour, and fry for a few minutes; then add the water gradually, and stir over tho fire until it thickens and boils. Return the mcai: to the pan, and simmer very slowly for-one hour; ndd salt and pepper to taste. Servo on a hot dish, and sprinkle very finely minced parsley over it. FOR TO-MORROW. Two pounds fillet of steak, . lib. tomatoes stewed stale sponge cake, A pint of cream.
