• (Spcoially written for Ths Dominion.) '■>' . MONDAY. Beef Olives.' Potatoes. ■ French Beans. Junket. Stewed Apricots. : BEEF OLIVES. . One' pound of g6od • steak, 1 oz. suet, 2 'ozs, breadcrumbs, J. teaspoonful salt, i teaspoonful pepper, • 1 egg, 1 teai-'poonful of choppcd parsley, a very little grated lemon;:.peel, a grate of'nutmeg, stock gravy..; Cut the steak.-thin and . divide: into 6 pieces; dip a rolling pin, into cold water, and.beat each pieco out flat; then, trim niccly. Cut tho other ingredients, arid make into a forcemeat with the egg. Divide into 6 portions, place each'.portion., on a pieco of steak, and ■form, into, a neat roll; tio up each end withcotton. - Put a- little dripping into a pan, and when-very hot fry the olives quickly until slightly brown. Put them into "& stewjan, pour on. the stock (enough to barely cover.' themj and simmer gently, for about 1J hours. If the steak is tough l they may be simmered a little longer. If liked the steak may be divided into 12 instead of 6.,
