'• One leg or shoulder of mutton, 1 cup , of breadcrumbs, J teaspoouful of salt, i tcaspoonfnl of. pepper, 1 small onion, •. 1 dessertspoonful of chopped sage, loz. , butter or dripping, 1 egg or 1 tablespoond ful of milk. . . ' Borie a well-hung shoulder or leg of . mutton; lay it. Hat on the table, and spread with a stuffing made from the ~ abovo ingredients. Roll up and shape as ~ much like a goose as possible. Sew up ' with strong cotton; put in a baking dish, . sprinkle a little salt and flour over it, j' and put dripping over it. Bake from "' H to 2J hours, according to the size of. the mutton, basting well at intervals; servo with a good brown gravy; veal stuffing may be used instead of sage and onion stuffing. .
