SMOKING OF TROUT.. ~ - Yet another , is to bo added to the list of State enterprises, tho. Government hav r ing. decided to erect a curing house in or near Rotorua for. tho .'smoking of trout. Explaining the/ project to a Dominion reporter, tho Minister, for Agriculture (the Hon. T. Mackenzie) said a two-fold purpose would bo served—trout would bo brought within' tho reach of a . larger number, of the' people, and thero would be yet another.object .instating trout of the lakes beyond the. desire to rc-duco the number so that the trout might improve in condition. . It is , intended . to begin in a small way, and :an inexpensive plant will bo procured. A vote of about jSIOO has been placed on tho Estimates to make a beginning. The Minister is . endeavouring 'to' obtain the services of a really good curer, and hopes that a stiirt will be mado during tho present fishing season.,.lt js : anticipated that, there will be good markets, and that a demand will quickly arise for, smoked trout, which makes a really tasty dish. The Government. will employ men to obtain the trout. for it, and the_ question of buying from anglers, is being considered, but it .is considered the, regulations on this point will require'careful. framing. The regulations .which will -govern the new industry havo not yet been framed, but they will, be drawn up. as soon- after the session closes as possible, and the Minister intends.'to visit the Rotorua district as soon' as he can. \
